SANDIE’S PUMPKIN SOUP

Soup is so satisfying and great for lunch or a light dinner.  I often make mine ahead and freeze it for the road

INGREDIENTS

  • 4 Cups Kent pumpkin
  • 2 leeks
  • 2 carrots
  • 3 cloves garlic
  • 2 brown onions
  • 2 sticks celery
  • 2 cups water
  • 1 continental Stock Pot and two cups water
  • 1 can Carnation Milk
  • Cumin to taste
  • Cooking oil
  • Salt and Pepper to taste
  • Chicken stock powder to taste
  • ½ cup chopped fresh coriander
  • ¼ cup chopped continental parsley

 

YUMMY POTATO SALAD

A great family favourite! If I didn’t make this Christmas Day I would have a revolt on my hands.

INGREDIENTS

  • 6 large potatoes (peeled and cubed)
  • 2 brown onions (chopped)
  • 3 rashers bacon (chopped)
  • 2 cloves garlic (peeled and crushed)
  • Praise Mayonnaise
  • 1 teaspoon mustard
  • Chicken stock powder to taste (approx one teaspoon)
  • Cooking Oil
  • Salt and pepper to taste.

 

 

THE BEST BURGERS IN THE WORLD

INGREDIENTS 

  • 500 grams of lean beef
  • 2 crushed garlic cloves+
  • 1 large egg
  • 1 packet of French Onion Soup Mix
  • Approximately ¼ cup breadcrumbs
  • Minced garlic to taste
  • 1 tablespoon barbeque sauce
  • 1 tablespoon gherkin relish
  • Salt and pepper to taste
  • 4 hamburger buns
  • 2 sliced tomatoes
  • Lettuce or rocket
  • 2 tablespoons cooking oil ( if cooking in pan)
  • 4 cheese slices

 

MULLED RED WINE

INGREDIENTS

  • 2 oranges sliced
  • 2 cups orange juice
  • 6 cinnamon sticks
  • 15 whole allspice (available from health food shops)
  • 15 whole juniper berries
  • 1 cup orange liqueur or brandy
  • 3 bottles red wine
  • 2 cups brown sugar
  • Whole cloves
  • extra brown sugar if needed

 

CAESAR SALAD

INGREDIENTS

                        DRESSING

  • 1 garlic clove mashed to a pulp
  • 1 egg yolk
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire Sauce
  • 5 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • 1 tin anchovies chopped
  • ½ cup grated Parmesan Cheese
  • 1 tablespoon of lemon juice
  • ½ cup fried bacon bits
  • 2 sliced boiled eggs

 

SALAD

  • 1 large romaine lettuce washed and broken into bite sized pieces
  • 2 cups croutons
  • 1 cup flaked parmesan

 

LEMON RICE

INGREDIENTS

  • 2 cups cooked rice
  • 4 cloves crushed garlic
  • 1 small onion finely chopped
  • 1 teaspoon chicken stock powder
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon parsley from tube
  • 1 teaspoon butter (optional)

 

TOMATO AND BASIL SALAD

INGREDIENTS

  • 1 Punnet cherry tomatoes
  • 1 red onion
  • 1 tablespoon sliced Kalamata olives
  • 1 teaspoon fresh Basil from tube
  • 2 tablespoons olive oil
  • 1 teaspoon of balsamic vinegar

 

                                                  

FANCIED UP TIN SPAGHETTI

INGREDIENTS

  • 1 tin spaghetti
  • 1 teaspoon garlic from tube or 1 garlic clove crushed
  • ¼ teaspoon chives from tube
  • ¼ teaspoon parsley from tube or 1 teaspoon of fresh
  • ¼ cup grated cheese
  • 1 tablespoon of tomato paste

 

FANCIED UP BAKED BEANS

INGREDIENTS

  • 1 tin baked beans
  • 1 tin tomatoes
  • 1 small onion
  • 1 clove garlic crushed
  • ½ teaspoon parsley
  • ½ teaspoon chicken stock powder
  • 1 tablespoon oil

 

SANDIE’S PAD THAI

INGREDIENTS

  • 1 packet pad thai rice noodles
  • 500 grams chicken breast or thigh cut into cubes
  • 2 tablespoons oil
  • 2 teaspoons grated fresh ginger
  • 1 large onion
  • 2 cloves garlic
  • 4 beaten eggs
  • ½ chinese cabbage
  • ¼ cup oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sesame oil
  • Two tablespoons chopped fresh coriander
  • 1 tablespoon ketjap manis
  • Soy sauce to taste
  • 2 tablespoons crunchy peanut paste

 

EASY PEASY PASTA

This pasta can also be made with a tomato theme by exchanging the Alfredo sauce with a sundried pasta sauce; adding ½ cup chopped sundried tomatoes and exchanging the basil pesto for tomato pesto

INGREDIENTS

  • 250 grams cooked spiral pasta
  • 2 tablespoons olive oil
  • 2 cooked and diced chicken breasts
  • 1 large brown onion
  • 3 cloves of garlic
  • 1 jar of Leggos Creamy Alfredo Pasta Sauce
  • 2 tablespoons basil pesto
  • ½ cup sliced kalamata olives
  • ¼ cup freshly chopped basil (2 teaspoons if using tube)
  • 2 tablespoons chopped fresh parsley (1 teaspoon if using tube)
  • 2 teaspoons chicken stock powder
  • ½ cup toasted pine nuts
  • 2 cups grated cheddar cheese
  • ½ cup grated parmesan cheese
  • 1 375 ml tin Carnation Light and Creamy
  • ¼ cup shaved parmesan
  • salt and pepper to taste

 

TWICED COOKED POTATOES

These potatoes are just delicious and a favourite of Sid’s.  I usually cook extra and put the leftovers in sandwiches the next day.

INGREDIENTS

  • 4 large potatoes washed but not peeled
  • 2 tablespoons olive oil
  • 2 cloves crushed garlic or 1 teaspoon from the tube
  • 1 teaspoon rosemary from the tubes or one sprig fresh rosemary
  • ½ teaspoon olive oil (extra)

 

CHEESEY SCRAMBLED EGGS

A great dish to have for breakfast if you are planning a long driving day

INGREDIENTS

  • 1 tablespoon butter or margarine
  • 1 dessertspoon olive oil
  • 4 large eggs lightly beaten
  • salt and pepper to taste
  • ½ cup tasty cheese
  • 1 dessertspoon chopped fresh chives
  • 1 tablespoon chopped continental parsley
  • Toast

 

IMPROVED HOMMUS DIP

I find the store bought hommus dips can be dry, tasteless and to be honest boring.  This is very tasty and so much healthier than the cream based dips.

 

INGREDIENTS

  • 2 X 250 gram container hommus dip
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon paprika
  • 1 dessertspoon chopped fresh parsley
  • 1 teaspoon olive oil

 

LAMB ROGAN JOSH

A little more complex than the other recipes, but well worth the effort if you’re a curry fan. This is inspired by a recipe from an excellent book called “the food of india – a journey for food lovers”, which I can recommend to you.

INGREDIENTS

1 Kg cubed lamb

6-8 garlic cloves, crushed

1 piece of ginger, grated

2 teaspoons coriander (ground)

2 teaspoons paprika

2 teaspoons cumin (ground)

Chilli power to taste (mild = ¼ teaspoon, medium = ¾, hot = 1 ½, incendiary = ?)

1 large onion, chopped fine

4-6 cardamom pods

4 cloves

2 bay leaves

1 cinnamon sick

200ml plain yoghurt

Pinch of saffron

2 tablespoons milk

¼-½ teaspoon garam masala

 

 

Fish a la Sid

This is how we always cook good quality fish with firm white flesh, such as Barramundi, Snappers, Red Emperor, etc. It’s the sauce that makes it. Enjoy it with a nice salad, or Sandie’s lemon rice.

INGREDIENTS

Fish fillets                   

Plain flour

Salt & pepper

Butter (or margarine)

Extra virgin olive oil

Lemon juice – fresh from 1 or 2 lemons is best, otherwise use the little yellow bottle!

White wine – any kind will do. The sweetness/dryness/fruitiness will translate accordingly to the sauce’s flavour.
